Tofu “Ricotta”

rye sandwich or bruschetta with ricotta cheese and herbs

1 (14 oz.) block of firm or extra firm tofu, pressed and drained
2 Tbsp. tahini
2-3 cloves garlic, minced
3 Tbsp. nutritional yeast
1 ½ Tbsp. lemon juice
2 Tbsp. shallot or white onion, finely chopped


Place all ingredients in in a bowl and mix together until well combined. Chilling over night will increase the flavor.
