Sweet & Spicy Cranberry Relish
1 (12 oz.) package fresh cranberries
1 ½ lbs. tart apples, peeled and cut into ½-in. cubes
~6-10 medjool dates
2 Tbsp. apple cider vinegar
1 jalapeño pepper, seeded and minced
1 Tbsp. fresh ginger, minced
In a saucepan over medium heat, combine 1 cup of water with the dates. Cover the pan until dates have softened in the water. Add cranberries, apples, and apple cider vinegar, then re-cover and boil until apples and cranberries are soft. Uncover, stir in jalapeño and fresh ginger and cook for a few minutes more. Serve warm alone or as a relish in a delicious veggie taco!
For a more smooth consistency, pulse in food processor until desired consistency!
