Hearty Potato Leek Soup

2-3 cups leeks, thoroughly washed and roughly chopped
2 garlic cloves
2-3 medium potatoes, unpeeled and roughly chopped
4 cups of veggie broth

Heat pan to medium heat and add leeks. Dry saute for until leeks become translucent, stirring frequently. Add garlic for 30 seconds until fragrant. Add potatoes and veggie stock. Simmer covered for 20 minutes until potatoes are tender.

Once potatoes are tender, cool and then place mixture in blender until you reach desired consistency. A hand blender can be used in place of a traditional blender. Season with salt, pepper as desired. Garnish with fresh chives.
