Creamy Kale-Basil Pesto Dip/Dressing

Pesto

Ingredients

1 cup raw, cashews*
~1-2 cups water
2 cups kale
1-2 cups basil
½ cup pine nuts
2 cloves garlic
Salt, to taste
squeeze of lemon (optional)

*If you have a vitamix or other high-powered blender, soaking cashews is not necessary. If you have a regular blender, soak cashews in water overnight or else the cashews will not become creamy enough. Once soaked, drain water and use new water for recipe.*

Directions

If soaking cashews, drain water. Place all ingredients in blender. Add water to reach desired consistency.
