Citrus-Marinated Roasted Beets
3-5 red and/or golden beets, stems chopped, unpeeled
1 orange, juiced
Preheat oven to 400 deg F. Wrap all of the beets together in tinfoil tightly, ensuring the a tight seal. Roast for 40-50 minutes, until fork tender. Once done, let cool 10-15 minutes. The peel should come off easily with hands or peeler. Slice or chop beets as desired and place in lidded container. Squeeze the juice of an orange on beets and store in fridge. Enjoy citrus-marinated beets on salads or wraps through out the week!
