Carrot Dogs

4-6 large carrots
¼ cup rice vinegar
¼ cup apple cider vinegar
1/8 cup water
¼ cup tamari sauce (soy or Bragg’s Aminos will work too)
1 tsp. garlic powder
1 tsp onion powder
1 tsp liquid smoke (optional)

Boil or steam carrots until al dente (about 8-10 minutes). Place in container and pour marinade over carrots. The longer the carrots marinate, the better with 24 hours being ideal. When ready to cook, heat pan to medium-high heat and place carrots in pan with marinade for about 5-8 minutes, or until fork tender. Serve on hot dog buns with favorite hot dog toppings.
